4 large tilapia fillets
2 cans or 2 fresh chopped artichokes, drained
2 tbsp olive oil
2 tbsp onion powder
1 ½ tbsp Badia Complete seasoning
1 tbsp lemongrass powder
2 tbsp Badia Sazon' Tropical seasoning
1 tbsp black pepper
½ tbsp salt

Preheat your oven to 400°F (200°C). Grease a baking pan with olive oil.
Prepare the seasoning blend: In a small bowl, mix together onion powder, Badia Complete seasoning, lemongrass powder, Badia Sazon' Tropical seasoning, black pepper, and salt.
Season the fish: Place the tilapia fillets in the prepared baking pan. Sprinkle half of the seasoning blend evenly over the bottom of the fillets.
Layer the artichokes: Spread the chopped artichokes evenly over the top of the tilapia fillets.
Add the remaining seasoning: Sprinkle the rest of the seasoning blend generously over the artichokes and fish.
Bake: Place the baking pan in the oven and bake for 30 minutes, or until the tilapia is flaky and cooked through.
Serve: Remove from the oven and let cool for a few minutes before serving. This dish pairs beautifully with rice or a fresh salad.
