These Strawberry Shortcake Overnight Oats are sweet, creamy, and ready when you wake up – rolled oats, fresh strawberries, coconut milk, and a dollop of whipped coconut cream.
1 cup coconut milk (the drinkable kind, not the canned thick one)
1 tbsp maple syrup or real honey
1 tsp vanilla extract
1/2 cup fresh strawberries, chopped small
Coconut whipped cream for topping
Extra sliced strawberries for topping

Instructions
In a mason jar or sealable container, add oats, coconut milk, maple syrup, vanilla, and chopped strawberries.
Stir or shake to combine.
Close the jar and let it sit in the fridge overnight (at least 6 hours).
In the morning, open it up and top with coconut whipped cream and extra strawberries.
Eat it cold, straight from the jar.
Notes
Tip: If you like it thicker, use a little less coconut milk. If you like it looser, add a splash more in the morning.Tip: This makes one nice full serving. So for each other serving, add these ingredients to each serving jar.
