Preheat your oven to 350°F. Line a baking sheet with parchment paper.
In a medium-sized bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
In a separate large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Add in the egg and red food coloring to the butter-sugar mixture. Mix until well combined.
Gradually add the dry ingredient mixture to the wet ingredients and mix until a soft dough forms.
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
Bake for 10-12 minutes or until the edges are set. The cookies may appear slightly undercooked in the center, but they will firm up as they cool.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
In a mixing bowl, combine softened cream cheese, powdered sugar, coconut oil, and vanilla. Beat until smooth and creamy.
Now, once the cookies have cooled, we can add the frosting.
Spread a layer of frosting on each cookie with an icing spatula or knife.
Serve with a side of vanilla ice cream for some extra sweetness.
