Ingredients
  

  • 2 cups all-purpose flour
  • 2 1/2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups sugar
  • 1/2 cup softened butter
  • 2 eggs
  • 1 tablespoon red food coloring For the Cream Cheese Frosting:
  • 1 package cream cheese, softened
  • 1 cup powdered sugar
  • 1 1/2 tablespoons coconut oil
  • 1 tablespoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  • In a medium-sized bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  • In a separate large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Add in the egg and red food coloring to the butter-sugar mixture. Mix until well combined.
  • Gradually add the dry ingredient mixture to the wet ingredients and mix until a soft dough forms.
  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
  • Bake for 10-12 minutes or until the edges are set. The cookies may appear slightly undercooked in the center, but they will firm up as they cool.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • In a mixing bowl, combine softened cream cheese, powdered sugar, coconut oil, and vanilla. Beat until smooth and creamy.
  • Now, once the cookies have cooled, we can add the frosting.
  • Spread a layer of frosting on each cookie with an icing spatula or knife.
  • Serve with a side of vanilla ice cream for some extra sweetness.
