Ingredients
2 cups of rolled oats
1 cup almond butter
4 tbsp maple syrup
2 tsp espresso powder or instant coffee
1/2 cup shredded coconut
1/4 cup dark chocolate bits
A pinch of salt

Instructions
Add oats, almond butter, shredded coconut, maple syrup, espresso powder, chocolate, and salt to a bowl.
Stir or mash with a spoon until it’s evenly combined and sticking together.
Scoop and roll into small balls, about 1 inch wide.
Lay them on a plate or parchment-lined tray and chill for at least 20–30 minutes to firm up.
Store in the fridge in a sealed container.
Notes
They’re sweet, a little bitter from the coffee, and just rich enough to feel like a treat.
