Coconut Almond Espresso Energy Bites – No-Bake Vegan Snack
These Coconut Almond Espresso Energy Bites mix oats, espresso, almond butter, and dark chocolate for a sweet boost of energy in bite-size form.
Equipment
- 1 mixing bowl
- 1 cookie sheet
- parchment paper
Ingredients
- 2 cups of rolled oats
- 1 cup almond butter
- 4 tbsp maple syrup
- 2 tsp espresso powder or instant coffee
- 1/2 cup shredded coconut
- 1/4 cup dark chocolate bits
- A pinch of salt
Instructions
- Add oats, almond butter, shredded coconut, maple syrup, espresso powder, chocolate, and salt to a bowl.
- Stir or mash with a spoon until it’s evenly combined and sticking together.
- Scoop and roll into small balls, about 1 inch wide.
- Lay them on a plate or parchment-lined tray and chill for at least 20–30 minutes to firm up.
- Store in the fridge in a sealed container.
Notes
They’re sweet, a little bitter from the coffee, and just rich enough to feel like a treat.
