Strawberry Shortcake Overnight Oats
These Strawberry Shortcake Overnight Oats are sweet, creamy, and ready when you wake up – rolled oats, fresh strawberries, coconut milk, and a dollop of whipped coconut cream.

- 1 small mason jar or container with lid
Ingredients
- 1 cup rolled oats
- 1 cup coconut milk (the drinkable kind, not the canned thick one)
- 1 tbsp maple syrup or real honey
- 1 tsp vanilla extract
- 1/2 cup fresh strawberries, chopped small
- Coconut whipped cream for topping
- Extra sliced strawberries for topping
Instructions
- In a mason jar or sealable container, add oats, coconut milk, maple syrup, vanilla, and chopped strawberries.
- Stir or shake to combine.
- Close the jar and let it sit in the fridge overnight (at least 6 hours).
- In the morning, open it up and top with coconut whipped cream and extra strawberries.
- Eat it cold, straight from the jar.
Notes
Tip: If you like it thicker, use a little less coconut milk. If you like it looser, add a splash more in the morning.
Tip: This makes one nice full serving. So for each other serving, add these ingredients to each serving jar.
